Deep Fried Chicken with Fermented Tarocurd 金雞报喜
Deep Fried Chicken with Fermented Tarocurd 金雞报喜 Ingredients:
1. 1 Longgang chicken (1.65 kg)
2. 1 tbsp Shaoxing wine
3. 1 tbsp ginger juice
4. 2 stalks lemongrass (finely chopped)
5. 1 piece fermented tarocurd (mashed)
6. 1 egg (beaten)
7. cornflour
Deep Fried Chicken with Fermented Tarocurd 金雞报喜 Dipping sauce:
1. 1/2 piece fermented tarocurd (mashed),
2. 2 tsps sesame oil,
3. 2 tsps sugar,
4. 3 tbsps water
(* mix the above ingredients)
Deep Fried Chicken with Fermented Tarocurd 金雞报喜 Method:
1. Wash and chop up chicken. Add Shaoxing wine, ginger juice, lemongrass and fermented tarocurd. Mix well. Marinate for 1 hour.
2. Mix beaten egg with chicken. Coat chicken with cornflour evenly. Deep fry in boiling oil until golden brown and crispy. Drain. Serve with dipping sauce.
